Bronze-drawn durum wheat semolina pasta

La TrafilataThe drawing phase determines the shape of the pasta. Mixture is forced through a cavity that gives the wished shape and some knives cut the pasta at the wished length.

The die can be in Teflon or in bronze.For the great majority of pasta on the market the former is used, but the latter grants a product much more linked to “what we used to be”, because in the past dies were only in bronze.

It is a matter of fact: bronze-drawn pasta shows a wrinkled surface that captures much better the seasoning. Therefore, it gets much tastier.For the joy of gourmets…
